Bread & Lessons

Questions answered.
Who are we? We are a micro business (no more than 2 employees) located in Bothell. We are licensed as a Washington State Cottage Food Operation. We are currently governed by the WA State Department of Agriculture. Cottage Food businesses operate out of private kitchens and only private kitchens. We are inspected yearly. Our owner and chief baker has years of experience in commercial kitchens, baking & cooking, as well as years of experience teaching culinary classes.
What’s our vision? We want to connect customers to products made with great ingredients, supporting Washington farmers.
What about our ingredients? We source our flour, the most important element of a bakery, from Washington State. Our flour comes from Bluebird Grain Farms (Winthrop, WA), Cairnspring Mills (Burlington, WA), Chimacum Valley Grainery (Chimacum, WA), and occasionally from Fairhaven Mill (Burlington, WA). We also source wheat berries from Bluebird Grain Farms and from Moon Family Farm (Horse Heaven, WA) which we mill onsite for most of the whole grain flour used. Fruit, apples-stone fruits-berries-etc, used in pies and scones come from Farmers Market vendors and 21 Acres, and, off-season, frozen from Remlinger Farms and those packaged under PCC’s own label. We use jam made from PNW fruit. We use organic butter, eggs, sugars and oats. We source our chocolate ingredients through Equal Exchange, a fair trade farmer coop, giving cocoa growers the best price for their product.
What about our packaging? The majority of our packaging is commercially compostable. The kraft paper bags for the bread, the papers underscoring the pies, and all of the smaller plastic bags are compostable. Larger plastic for the 8-inch rounds of cinnamon rolls or the demo loaf of Rustic are not. If the packaging is very noisy plastic, it’s probably compostable. Ask!!
Where can you find our baked goods? The best place to get our goods is through our email list. You can sign up here. This list lets you know what’s on offer for porch pickups, lets you know what markets or events are happening, keeps you up-to-date on all things Tiny Kitchen. Year-round porch pickups are in Bothell (Wednesdays) and at 2 locations in Bellevue (Thursdays). For 2025, we will be at the Lake Forest Park Farmers Market, Sundays 10A-2P. The LFP market begins on May 11, 2025 (Mother’s Day). Arrive early for bread!
